Welcome Chef Pete to Creekside Grill!

Here at Echo Bluff State Park, we take many things seriously – fun, family, and, of course, FOOD!

We care about our carbon “hoofprint”, so we support natural quality meat with minimal processing, no added hormones or antibiotics, and raised using a sustainable and humane system.

We have been lucky to add Chef Pete Schafer to our team. Chef Schafer is from Roseau, Minnesota and has always been around food; especially growing up on a dairy farm run by his dad and uncle.

During college, he nurtured his love for food and education by going to Hibbing Community College in Hibbing, Minnesota, for culinary arts. After two years, he graduated with an A.A.S in culinary arts.

Throughout his culinary career, he worked at various golf courses and a few restaurants before joining the Guest Services team at one of our units in Minnesota, Giants Ridge. Chef Schafer worked up the ladder from a line cook to sous chef. When the opportunity arose at Echo Bluff State Park and the Creekside Grill, Chef Pete took it and now is further developing the culinary cuisines.

When not at the Creekside Grill, Chef Pete enjoys many outdoor activities like playing golf, downhill and cross-country skiing, hiking, going to the movies, hunting, and dining out.

Be on the look-out for some of Chef’s favorite items to cook like fresh pasta, sushi, pastries, and butchery.

See you soon at Echo Bluff State Park and the Creekside Grill! Our hours include: Breakfast from 7 – 10 am, Lunch from 11 am – 3 pm and Dinner from 5 – 9 pm.
